Jeonbuk National University (JBNU) Department of Food Science and Human Nutrition PhD candidate Seon-ah Choi (School Meal Service and Culinary Science Laboratory, supervisor Noh Jeong-ok) recently received an Encouragement Award at an outstanding paper competition using the Korea Rural Economic Institute’s food consumption survey data.

PhD candidate Seon-ah Choi presented research using the 2021 raw data from the Food Consumption Survey under the title 'Analysis of Family Dietary Behaviors and Sustainable Dietary Capacity According to Parents' Dietary Lifestyle'.

The study analyzed types of parental dietary lifestyle and comprehensively examined household-level sustainable dietary capacities, including perceptions of school meals, food choice behaviors, healthy eating, environmentally friendly eating, and the preservation of traditional dietary practices. The analysis was evaluated as providing implications for practical measures to manage sustainable diets at home and for improving understanding of school meal programs.

PhD candidate Seon-ah Choi commented, 'Under the guidance of Professor Noh Jeong-ok, I was able to conduct research on nutritional assessment and nutrition education methods for low-carbon vegetarian school meals, and I am pleased to have received this meaningful award.'

Meanwhile, JBNU's Department of Food Science and Human Nutrition is committed to training specialists in the field of food and nutrition through interdisciplinary education and research that integrates food science, nutrition, and school meal studies.
