Yuhyeon Cho, a doctoral student (Department of Food Science and Human Nutrition, College of Human Ecology; Food Service and Culinary Science Laboratory; supervising professor Jeong‑ok Noh), recently received an Encouragement Award at the 'Young Researchers Competition' held at the 2025 Autumn Conference of the East Asian Society of Food Culture.
Cho presented her research under the title 'Quality Characteristics and Optimization of Manufacturing Conditions for Dried Noodles with Added Mealworm Powder Using Response Surface Methodology' at the paper presentation competition.
She proposed optimal manufacturing conditions for incorporating edible insects into noodle product development to enhance culinary and nutritional benefits, earning high praise from the judges.
Cho said, 'Under the guidance of Professor Jeong‑ok Noh, I was able to conduct research on various product developments and optimizations, and I am pleased to have received this meaningful award.'
Meanwhile, the Department of Food Science and Human Nutrition at Jeonbuk National University (JBNU) conducts interdisciplinary education and research integrating food science, nutrition, and foodservice, and strives to train food and nutrition professionals.
